Collard Greens and Complements

Today’s ingredient is Collard Greens. Collards figure prominently in various African, Jamaican, Indian and, of course, Southern US cuisines. Greatest ingredient complements are beans ( in general ) and vinegar. Among beans, most folks, at least in the south, are used to seeing black eye peas in the but you can make a pretty nice dish using vinegar and canned cannellini beans.
