Thai Larb Gai

So few ingredients and yet so good. Don’t skip on the roasted rice powder or the thai chili ( both available at Amazon ). You’ll never order lettuce wraps at PF Chang’s again.


  • 16 oz ground turkey or chicken
  • 2 tbsp roasted rice powder
  • 1/2 tsp hot thai chili powder
  • 4 tsp fish sauce ( Red Boat, if possible )
  • 5 tsp lime juice
  • 1/4 cup finely chopped red onion
  • 2 tbsp chopped cilantro
  • 2 tbsp chopped scallions
  • 10 mint leaves
  • Lettuce leaves

Directions ( super easy )

In a skillet over high heat, pour in 2 tablespoons of water and your ground chicken. Stir often. You are only cooking this chicken enough to get it *just* done. You aren’t browning it.

Next, in another large bowl, stir together everything else. Thing is about Thai food, is that a lot of it is mise en place, and this is no exception. After it’s well blended, stir in your chicken, serve on lettuce leaves!

Optionally, but this is good, add a discretionary amount of peanuts for textural contrast.
